Always place turkey fryers outdoors, a safe distance from your home. Do not place turkey fryer on your deck or in your garage.
Make sure to place fryer on a solid surface to help prevent fryer from tipping over.
Do not overfill your fryer. To determine how much oil you'll need, put the turkey in the basket and place in the pot. Add water until it reaches one to two inches above the turkey. Lift the turkey out, and use a ruler to measure the distance from the water to the top of the fryer. Pour out the water and dry the fryer completely.
Make sure the turkey is completely thawed and dried. Oil and water don't mix!!! Water will cause the oil to spill over, causing a fire or even an explosion hazard. So, pat dry your turkey with paper towels to remove excess moisture. The National Turkey Federation recommends refrigerator thawing and to allow approximately 24 hours for every 5 pounds of bird you need to thaw.
Raise and lower food slowly to reduce splatter and avoid burns.
Cover bare skin when adding or removing food. Do not wear baggy clothing and always use potholders when lifting lid or touching handles.
Check the oil temperature frequently. If any smoke at all is noticed coming from a heating pot of oil, the burner should be turned off immediately because the oil is overheated.
Keep an all-purpose fire extinguisher handy and know how to operate it. Never attempt to put a grease/oil fire out with water. If a fire does breakout, dial 9-1-1 immediately.
Do not allow children or pets near the turkey fryer. The oil inside the cooking pots is very hot and remains dangerously hot hours after use.
